Tofu has a bad reputation of being "tasteless" and "soggy." Whether you eat tofu for allergy purposes, vegan/vegetarian alternatives, or just love the diverse ways to use tofu, here are some ways to spice up this "tasteless, soggy brick." š
Tofu Scramble (makes 3-4 servings):
2 tbs of high heat oil of choice(canola, grapeseed)
1 block of extra firm tofu
1 medium onion, diced
1-2 shredded carrots
1 zucchini, sliced (or shredded)
2-3 cloves minced garlic
1-2 handfuls of chopped spinach
1 tbs liquid aminos
2 tbs nutritional yeast
Black pepper
Avocado (if desired)
Hot sauce (if desired)
1. In large (oiled) pan, saute onions until translucent (medium-medium/high heat). Add in carrots, zucchini, and garlic. Saute for 3-5 more minutes.
2. Using your hands, crumble your block of tofu over the pan into fine pieces. You have some creative room here: for a "chunkier" consistency, crumble into larger chunks. I like to make mine into fine crumbles, so I continue to break it apart in the pan with the veggies after I've crumbled by hand.
3. Fold in your chopped spinach.
4. Continue to cook until spinach is soft and tofu is well heated.
5. Add in your liquid aminos (drizzle or spritz), nutritional yeast, black pepper, and any other desired spices to your taste. I occasionally add some curry powder into mine.
6. Portion out, and serve with hot sauce and avocado (if desired).
Tofu "fries"
1 block of extra firm tofu
Juice of 1/2 lime
1 tbs liquid aminos
"Umami" seasoning blend
1. One of the key steps to achieving a crispy, and fluffy tofu is to soak up the water. I like to wrap my tofu in a towel or paper towel and press the water out by hand. You can also place a pan on top of your tofu and top with heavy objects to let the water out for a few minutes.
2. Cut your tofu into long sticks. I like to cut mine into 12 sticks (4 cuts length wise, 3 cuts height wise)
3. Combine lime juice, liquid aminos, and "Umami" seasoning in a bowl. Toss tofu in mixture until covered.
4. Air fryer method: Place tofu strips in a single layer across the bottom of your air-fryer pan. Air fry for 14-16 minutes at 360, flipping halfway. Oven Method: Line tofu strips in a single layer on a greased baking sheet. Bake for 20-25 minutes at 400, flipping halfway.
5. Tofu "fries" are best served with peanut sauce. The peanut sauce recipe can be found under the "Throw Together Bowls" posting.
Tofu Taco "Meat"
1-2 tbs high temperature cooking oil
1/2 medium onion, diced
1-2 tbs liquid aminos
2 tbs tomato paste
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
2 tsp chili powder
1 block of extra firm tofu, patted dry.
1. In a large pan, heat oil over medium-medium/high heat and saute onions.
2. Add in your liquid aminos, tomato paste, onion powder, garlic powder, smoked paprika, and chili powder.
3. Cook onion & spices for 1-2 minutes together, then crumble tofu into the pan. Chunks can be as large or as fine as desired.
4. Stir until well combined. Cook until tofu is fully heated and tender.
5. Serve on top of a whole wheat tortilla, with greens, desired veggies, and topped with avocado and cilantro (maybe some Bitchin' sauce, too)!
