This chocolatey recipe makes for a nutritious breakfast or snack and gives you that yummy chocolate flavor we all crave in a healthy way!
1/2 cup chia seeds
2 cup unsweetened almond milk
or 1 % dairy milk
1/4 cup cocoa powder
2 Tbs maple syrup
1 1/2 tsp vanilla extract
2 tbs natural peanut butter
1/4 tsp cinnamon
Directions:
-In a medium bowl add 5 1/2 Tbs chia seeds, 1 1/3 cup milk, cocoa powder, 1 Tbs maple syrup, and 1 tsp vanilla. Whisk until all ingredients are combined.
-In a small bowl, add 2 1/2 Tbs chia seeds, 2/3 cup milk, peanut butter, 1 Tbs maple syrup, 1/2 tsp vanilla and cinnamon. Whisk until all ingredients are combined.
-Place both bowls in the fridge and let sit over night.
-To arrange, scoop desired amount of chocolate chia seed pudding into a cup or bowl, top with a scoop of the peanut butter chia pudding, then add another chocolate layer. Top with any fruit you desire; bananas, fresh berries, chopped nuts, pecans, walnuts, hazel nuts, unsweetened shredded coconut, just to name a few. Enjoy!
