Here is a great recipe for a healthy treat, with 8 grams of added sugar per serving when cut into 12 pieces.
Ingredients:
1/3 cup mashed sweet potato or pumpkin
1/4 cup almond butter
1 can of chickpeas (drained and rinsed)
1/4 cup of honey or pure maple syrup
1/4 cup of whole wheat flour
3/4 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/8 tsp baking soda
2 tsp pure vanilla extract
*Optional but Highly Recommended:
1/2 cup of dark chocolate chips (60% cacao or more)
Instruction:
1. Preheat oven to 350 F.
2. Drain and rinse the chickpeas.
3. Using a food processor, combine all ingredients except for the chocolate chips (if using). A blender will work if a food processor is not accessible, but a food processor will give you a better texture.
4. Stir in the chocolate chips if using
5. Grease an 8x8 pan with a neutral oil (Avocado, canola, etc.)
6. Spread the batter evenly in your pan.
7. Bake on center rack for 28 minutes.
8. Cut bars evenly into 12 pieces
9. Bars can be eaten warm or cold, and stored in the fridge. (Amy prefers warm and Jennifer prefers chilled).
