{Pumpkin} Spicing Up Your Steel Cut Oats

Ingredients (4 servings):

3 Cups water

1 cup steel cut oats (or instant steel cut oats)

1 cup pumpkin puree

1 tsp cinnamon

1 tsp pumpkin pie spice

1 small Banana sliced per serving

1/2 tsp of vanilla

Honey for drizzling, shredded coconut to sprinkle on top (optional)

1/4 cup chopped walnuts, pecans, and/or almonds


Instructions:

1. There is some flexibility in this first step. If using instant steel cut oats, prepare your oats according to the package. Once done cooking oats, add pumpkin puree, cinnamon, pumpkin pie spice and vanilla and mix until well incorporated.

2. If using regular steel cut oats, combine water and oats in a saucepan over medium heat. Bring mixture to a boil, then reduce heat and let simmer for 20-30 minutes (be sure to stir frequently). Once done add in pumpkin puree, cinnamon, pumpkin pie spice and vanilla and mix until well incorporated.

3. Portion oat mixture into bowls to serve.

4. Top with sliced banana, chopped pecans, almonds and/or walnuts. Feel free to drizzle a small amount of honey over the top and sprinkle on some shredded coconut. 😊
