I know what your thinking, "black beans for brownies, eww" Trust me and give it a try, I promise you wont be disappointed with this dessert. I bring it in to Rehab yearly for our holiday party for our patients and it's definitely been a winner!
Ingredients
1 (15 oz) can black beans, drained and rinsed
2 large eggs
¼ cup cocoa powder
½ cup honey
1/3 cup vegetable oil
½ tsp baking powder
Pinch of salt
¾ cup semi-sweet or dark chocolate chips, divided
4 drops Peppermint essential oil or 2 tsp peppermint extract
Directions
1. Preheat oven to 350 degrees
2. Place all ingredients, except for chocolate chips, in a blender or food processor and blend until smooth
3. Pour batter into a large bowl and stir in ½ cup chocolate chips
4. Pour into greased (avocado or canola oil) 8x8-inch pan and top with ¼ cup chocolate chips
5. Bake 30-35 minutes until toothpick comes out clean.
