Healthy Carrot Cake Muffins

Ingredients:

2 cup whole wheat flour

1 tsp baking soda

2 tsp baking powder

pinch of salt

2 tsp cinnamon

1/2 tsp pumpkin pie spices (optional)

1 Tbs ground flax seed

1/3 cup pure maple syrup

1 cup low fat milk or milk alternative

1/2 cup peanut butter

2 tsp vanilla extract

2 medium over ripe Bananas, mashed

1 cup grated Carrot

1/2 cup chopped walnuts or pecans





Instructions:

1. Pre-heat over to 350 degrees F. Grease a 12 cup muffin tin.

2. Stir together flour, baking soda, baking powder, salt, cinnamon, pumpkin pie spice and flax seed.

3. Stir in milk, peanut butter, maple syrup, vanilla extract, and mashed banana. Sit until well combined.

4. Gently stir in grated carrot and nuts.

5. Evenly spoon mixture into 12 muffin cups

6. Bake for 20-25 minutes until golden brown.

7. Let cool slightly and Enjoy!

*Look for peanut butter without added sodium and sugar, read your labels! (Adam's all natural peanut butter can be found at most grocery stores.)
